Apricot and Citrus Chicken

1 farm chicken cut in 8-10 pieces
The Juice of 1 1/2 Lemon
The Juice of 1 1/2 Orange
10 unpeeled Garlic Cloves
6 dry Apricots
Salt & Pepper
Olive oil.
1 glass of Mineral Water
All my different chicken casseroles starts the same way. Put salt and pepper on the chicken and roast well in a saucepan with the olive oil.

Put the chicken in a middle high pan and add some new olive oil. Add the rest of the ingredients. Let simmer for 45 min.Take out the chicken. Put the sauce in a blender glass and peel 4 of the garlic cloves. Add the garlic cloves and the apricots to the sauce. Add more water if needed. Pour the sauce back into the pan and add the chicken. Let simmer for 10 more minutes. My guests didn’t even notice the garlic so don’t be afraid of adding the garlic cloves. I think it’s more important HOW you use the garlic.
