Hi Oliver,

I am right now watching your TV program in Spain.Your recipes looks like really tastefull and easy to prepare, what is great and probably part of the reason of your success. Although, I must say that the way you prepare them looks like really dirty.

You never wash your hands and sometimes we can see that your nails are brown. Further, this process to shake the food, salads directly with your hand, and the fact that seems you never wash the vegetables, meat, etc before start to preparing there, is really disgusting to see.

Today you are preparing pizza and we could clearly see that the "albahaca" you have used to prepare the tomate saucewas dirty, probably comming directly from your garden, without never been washed.

Really, I like your recipes, I have also your book, but I do suggest you to improve the cleaness. It really impact us in Spain and Brazil. To cook well is also to be clean.

This is television so "maybe" not every step is shown as they only allocate 30 minutes, it would take forever if they had to show the washing of the veg too.

I have watched many of his shows and he seems quite clean to me.  I mean there are times when he even says that he is chopping on the crate and he mentions that "this is not very higenic, but I like a little dirt". 

We live in a society where we dissinfect/sterilize way too much and this is why we are all sick and the germs get stronger.  We don't allow our children to play and get dirty.

In a RESTAURANT environment it is sure that proper hygenic methods are applied... the man is cooking a meal for himself so I guess we can give him a break

I'm sorry, but I agree with despina. I watch the food network and various other cooking shows and they all seem to cut corners from time to time when it comes to food hygiene.  Again, I do think that it's done in the interest of time.  Jamie's show this time around features what I think is homestyle, rustic cooking.  It's about getting in there and never mind the fuss.  Additionally, I know that this is a blog and free speech is certainly welcomed, but comments such as this always strike me as trying to feign honesty when it simply comes across as just being rude ....especially when a person chooses to use this kind of forum to express their opinions...Just my humble opinion on a subject that seemed rather trivial and somewhat mean spirited. roll

firstly, I live in Spain, and have seen some really disgusting behaviour in bars and restaurants here,  have translated the "food handlers" exam for the food handlers permit for bars and restaurants in Spain, for Brits to be able to open businesses here and I have been present while explaining the exam and most of my clients have scoffed at these more than obvious basic hygene methods, who do not seem to go any further than the exam room because they are obviously not respected by "food handlers".

Jamie's food handling reminds me of the good old fashioned home way of cooking, he's not a food snob like Ferran Adria who nitrates and maked pearls out of the smoke of the BBQ for God's sake, where's the real food in that????

Secondly, who's to say that under Jamie's nails the brown is balsamic vinegar???? LOLbig_smilemrgreen

I've seen favas y arcachofas (broad beans and artichokes) peeled in the middle of the woods to make a paella on the floor, most authentic way ever!!!!
