artichoke pasta sauce

This is a fantastic sauce full of fresh Italian artichoke hearts and tomatoes straight from the fields of southern Italy. It’s a traditional pasta sauce made with garlic, onions and chunks of tender artichoke hearts.

• warm the sauce up in a pan and serve it with penne or spaghetti and plenty of Parmesan cheese
• simmer it with a little cream and fresh parsley, and serve it with fresh tagliatelle
• it’s great as a pizza topping with strips of Parma ham and chunks of mozzarella cheese
• pour it over chicken breasts and top it with a few chopped olives before baking it in the oven – delicious
