green pesto

My green pesto is a traditional Italian pasta sauce made from crushed fresh basil, pinenuts and Parmesan cheese, with a good olive oil stirred in to make it silky smooth.

• green pesto is fantastic tossed with freshly cooked spaghetti, a handful of Parmesan cheese and a glug of extra virgin olive oil
• it makes a great dressing on a simple tomato and mozzarella salad
• serve as a sauce with roasted chicken and potatoes – no need to heat it up – it’s ready to go!
• fold a dollop of pesto into mashed potato to make it rich and delicious
