Every year my good friend Daphne Tilly from Elwy Valley farm arranges a sourcing trip for the apprentices at Fifteen. This year Danny the site editor went as well to film the trip. I have known Daphne for about 7 years now and she's been supplying lamb to Fifteen for the past 5 of those. Everyone raves about the lamb that we serve at the restaurant. I really appreciate all that Daphne does for us and especially all the effort she puts in to hosting the apprentices. They always learn so much from the trip and get a real, thorough understanding of what good farming practices are all about and how important they are to the food they prepare at Fifteen. This year's trip was another success, so a big thank you to Daphne and her team at the farm!
