Baked Caprese Skewers with an Anchovy,Chilli & Garlic Dressing

Ingredients
Serves 2

8 slices of baguette or italian bread (1/2in thick)
1 ball of buffalo mozzarella,cut into 6 slices
2 med tomatoes
6 giant basil leaves
A little olive oil for brushing
1 clove of garlic,cut in half

Dressing:

3 tbsp olive oil
2 salted anchovies (cleaned & bones removed)
1 clove of garlic, finely chopped
1/2 red chilli, finely chopped
Salt & black pepper to season

Method
1. Preheat oven to 200C.
2. Brush the bread slices with a little olive oil and bake at 200C for about 10mins, till golden.
3. Remove from the oven and rub with the cut garlic clove.
4. Remove both ends from the tomato and cut each one into 3 thick slices.
5. Begin stacking with a slice of bread, followed by a slice of mozzarella,tomato and a basil leaf. Season with a little salt and continue stacking, finishing with a slice of the bread (4 slices per skewer).
6. Brush with a bit of olive oil and bake at 200C for about 10mins or until cheese just begins to melt.
7. Whilst the skewers are cooking, prepare your dressing.
8. Using a pestle & mortar grind together the chill and garlic. Add the anchovies and pound together a little before adding the olive oil. Mix well then season with freshly ground black pepper and a little salt (if necessary).
9. Serve the skewers surrounded with a little of the dressing and garnish with some basil leaves.
