Ingredients2 cups self raising flour
1 tsp baking powder
1 tsp pumpkin spice
1/2 cup light brown sugar
1 cup fruit mincemeat
1 egg
1/2 melted butter
3/4 cup buttermilk
1 tbsp milk
2 tsp demerera sugar
Incredibly quick and simple to make, these are great during the festive period and a great place to add the leftover mincemeat!MethodPreheat oven to 400F
In a bowl mix all the dry ingredients together.
In a separate bowl mix together the rest of the wet ingredients (mincemeat, egg, butter, buttermilk, milk)
Add the wet ingredients to the dry and briefly mix until just combined.
Spoon your batter into your prepared tin. Sprinkle some demerera sugar on the tops. Bake for 18-20 minutes

BRILLIANT! Made these and substituted the regular flour for Pamela's Gluten Free Baking and Pankcake Mix for AWESOME Gluten Free muffins for my beautiful bride.
