Chocolate Chip with Nuts Cookies

Recipe courtesy Arlene Arnold

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) unsalted butter softened
1 3/4 cup packed light brown sugar
1 teaspoon pure vanilla extract
2 large eggs
1 Cup of chopped Walnuts or Pecans
1 (12-ounce) block chocolate into small chunks larger than a chocolate chip
Mix together dry ingredients the flour, baking soda, and salt and aside.

Preheat the oven to 350 degrees F.

Place the butter, sugar, and brown sugar in the bowl and mix by hand or
use an electric mixer, mix together until light and fluffy.
Now mix in the vanilla and eggs. Now add the dry ingredients to the
mixture and continue to mix until batter is smooth. Fold in the chocolate
chunks and nuts using a wooden spatula.

To form the cookies, use a tablespoon and scoop it up placing the dough
into the palm of your hands and roll it around into a ball. Place cookie
balls about 1-inches apart onto the cookie sheet and should be able to
fit 16 dough balls easily. Press down the tops of the dough slightly
and bake until the cookies are light brown, 12-15 minutes.

Allow the cookies to cool a few minutes before transferring to a rack to cool.

7. Helen Neobard Fri 12 Feb 2010 @ 22:46 I used this recipe and plonked most of it into a greased, heart-shaped cake tin for my husband for valentines day, it took about 3 times as long to cook but oh my god did it turn out well! it was a giant cake cookie! He thinks I'm trying to kill him with cookie now hehehe. I used 400g chocolate and omitted the nuts as he doesn't like them. It tasted amazing!!!!!!!!
8. Marina Sun 10 Jan 2010 @ 17:32 ok, so i've just made the cookies... i used a machine called "Bimby" to mix things up, but in the end i kept looking at the dough a thinking it was to liquid so i kept adding flour... but as i added the flour the dough looked the same so i gave up. as i had stuff to do and a fish in the oven, i left the dough where it was and only continued after 2 hours... so good knews, it looked like it did when i finished.
So i did what i had to do and i ended up with 2 trays of 16 cookies each... the dough melted down and the cookies were very large but thin. but you know what they look better than the ones you bye, looke more home made and taste like true cookies and not like the ones that we love to bye cause it's much easier. it's so worth the time. after cold they are crunchy.

Oh, one more thing, as i diced the chocolate in the machine, i got big, medium and small chunks of chocolate chips and also some chocolate powder, so the cookies are brown...lol. i also added cinnammon

AWSOME...
next is Jamie's brownies and the tiramisu that he made on the tv show, i can't get enough of it... it incredibly tasty and i love it.
