Indian Recipes.....by Suresh Nair

Stuffed Tomatoes in Gravy

INGREDIENTS


8 tomatoes-medium, firm and equal sized
oil to brush the tomatoes
250 gm boiled and mashed potatoes
¼ cup chopped onions
chopped green chillies-to taste
2 tbsp chopped coriander
1 tsp salt
1 tbsp mustard oil
gravy of your choice
coriander for garnish

METHOD


Slice the top of the tomato and scoop out the seeds and flesh to get an empty cup. Keep the lid aside.

Brush the tomatoes inside out with the oil.

Fill the tomatoes with the potato mixture and put the lid back.

Bake in a pre-heated oven for 10-15 minutes, till a very light brown. You can also brown under a grill.

Heat the gravy, place the tomatoes in a serving dish, pour gravy over, garnish with coriander and serve.

Chicken Biryani by Suresh Nair

INGREDIENTS
(Serves 4)


1 ½ tsp salt
red chilli powder according to taste
turmeric powder according to taste
1 chicken
2 onions
1 tbsp ginger paste
1 tbsp garlic paste
2 tbsp chopped coriander
6 cardamoms
6 cloves
½ tsp cinnamon powder
350 ml yoghurt
500 gm half cooked rice
3 tbsp oil

METHOD



Grind all ingredients except chicken and rice. Marinate the chicken in the mixture for 2-3 hrs.

Heat oil in a pan. Add the marinated chicken and cook until tender.

Take a heavy pan and arrange the chicken and rice in layers. Squeeze a lemon on the top layer and scatter browned onions.

Seal the pan with atta and cook over a very slow flame for 40-50 minutes.

Serve hot.

INGREDIENTS


2 pomfrets
½ lemon
1 tbsp salt
1 grated coconut
½ tsp cumin seeds
4 flakes garlic
½ tsp turmeric powder
8 pieces red chillies
1 tbsp coriander leaves
3 tsp tamarind water
5 cups water
1 onion
2 green chillies

METHOD


Cut the pomfret into desired number of pieces. Add salt and lime juice to fish and marinate for 10 minutes.

Grind coconut, cumin seeds, garlic, turmeric, red chillies, coriander leaves, with tamarind water and ½-cup water to a paste. Add remaining water to paste and place on fire.

Add sliced onion and slit green chillies to gravy on fire. Wait for 2 boils and add marinated fish.

If boneless give the gravy one more boil. If with bone, give it 2-3 more boils.

Serve hot with unpolished rice.

Use 1 or 2 Tablespoons for an authentic madras curry.
2 1/2  tablespoons coriander seeds, dry-roasted and ground 
1  tablespoon cumin seeds, dry roasted and ground 
1  teaspoon brown mustard seeds 
1/2  teaspoon cracked black peppercorns 
1  teaspoon chili powder 
1  teaspoon ground turmeric 
2  cloves crushed garlic 
2  teaspoons grated fresh ginger 
3-4  tablespoons white vinegar

Method

Put all ingredients except vinegar into small bowl and mix together well.
Add the vinegar and mix to a smooth paste.
Keep for up to one month in an airtight container in fridge

Suresh, I love making and eating Indian food (well the British version anyway) so it's a real treat to have some genuine recipes.

My flavour shaker is going to loose it's virginity tomorrow with your Madras paste. Could you give us the rest of the recipe to finish the curry, is it tomato or yoghurt based ?

Hey Suresh,

thx for starting the thread, I'll definitely be a regular user  big_smile . Could u also post some delicious recipes for vegetarian curries?

BTW, a question for everyone - if you had to cook a first Indian meal for someone(=unaccustomed to Indian spices!), what would u make?
