Mango is nice but I guess it depends where in the world you are from as to whether or not it is "exotic". Until I moved into an apartment I'd always had a couple of  mango trees in the back garden. Hear they have dwarf ones now suitable to grow and fruit in pots. Must investigate further.

Mango season here now so we're eating them daily.

Re: Indian Recipes.....by Suresh Nair

Here a quick version of a favourite we had tonight...
Penang Curry

Ingredients
•    400ml coconut milk
•    1 tablespoon shredded lime leaves
•    2 teaspoon raw sugar
•    500g chicken breast, cut into bite sized pieces...add for the last 20 minutes
•    1 tablespoon fish sauce...add towards the end of cooking
a good handful of fresh bean sprout, washed and mixed in right at the end

The Curry Paste: made into a rough paste in the food mixer
•    chilies as hot as you like it
•    1 teaspoon salt
•    4 inch stick of finger thick ginger
•    2 tablespoons lemongrass
•    3 tsps coriander powder
•    3 tsps cumin powder
•    1 tablespoons garlic
•    2 tablespoons onion
•    1 tablespoon roasted peanuts

Add half the milk to the pan and all the paste.
Mix and add more milk to thin down the sauce.
Add the lime leaves.
Simmer for 20 minutes. Taste...it should be good.
Add meat...add fish sauce after 10 minutes.
Add bean sprouts at the end.
Mix well and serve with rice.

Quick, easy, delicious xxx thumbsup
