Salad dressing - embarassed even to ask

OK, I know this is something everyone should know, but how do I make a basic vinaigrette? I love salad (and have a 4-yoear old who does too) but hate that taste that chemical taste every bottled dressing seems to have.

Please help!

1 c. olive oil
1/2 c. vinegar (up to you what type you like)
1/2 t. salt
1/2 t. garlic salt
1/2 t. pepper
1 t. mixed herbs
2 t. sugar
2 t. English mustard (powder)

Mix altogether.

A basic vinaigrette needs oil, vinegar and an emulsifier.

The classic proportions are:

1 part vinegar or lemon juice
3 parts oil
1 teaspoon dijon mustard or other emulsifier.

Put all together in a container, and shake until mixed, or whizz in a food processor.

Ok, thats the basis - now for the detail.

The actal ingredients are up to you. You can use whatever oil, vinegar or "acidic" juice you like, and any form of made up mustard you can find - it will always work.

Experiment with different oils - but use "flavour" oils, not cooking oils!

Use good quality ingredients, not cheap and nasty stuff.

Add salt & pepper, and any fresh herbs you want.

To make a creamier dressing, add yoghurt - or cream.

Use more mustard if you like.

Experiment - vary the proportion of oil to vinegar - but always more oil than vinegar. It will work anything from 1:1 to 10:1

Use immediately - but anything leftover will keep - just shake again before use.

This is my fave dressing my room mate used to make...

Salad dressing

2 TBSP olive oil
1 TBSP white vinegar
1 TBSP fresh lemon juice (if you dont have it just use vinegar)
2 tsp soy sauce
little bit of crushed garlic
few drops sesame oil
Put all ingredients into a bottle and shake. Adjust the quantities as you like. I dont always
make it the same, sometimes I make it more oily, sometimes more lemon, garlic etc.

A really nice light dressing :

1 Lime squeezed
1 tblsp of honey
1 tblsp of white wine vinegar
Salt + pepper to taste
2 tblsp of olive oil
Just mix all in a bowl

You may have to adjust quantities to taste - I always eyeball it....

Additionals - ginger garlic herbs play n have fun...

Well, I'm glad you asked! I love salads with a good dressing (how ucky are some shop bought dressings) - so hopefully people will have loads of ideas that we can all share  mrgreen

Basic Dressing

4 tablespoons EVOO
1 1/2 tablespoons Lemon Juice
1 medium clove Garlic, crushed
Salt (optional)
Freshly Ground Pepper

This should make enough for 2-3 large salads.

Add any of the following or a combination of any of them to make a variation on a theme:

1/2 - 1 teaspoon Dijon Mustard
1/2 - 1 teaspoon Wholegrain Mustard
1 teaspoon - 1 tablespoon Lite Mayonaise
1 teaspoon Tomato Paste
1 teaspoon Tahini + 1 tablespoon water
Dash of Worcester Sauce
1-2 teaspoons Tamari or Shoyu
1 teaspoon Honey
1-2 teaspoons BBQ Sauce
1/2 - 1 teaspoon Dried Mixed Herbs
1/2 - 1 teaspoon Curry Powder
Dash of Cayenne
1/2 teaspoon Paprika
1/4 - 1/2 teaspoon dry mustard
1 teaspoon poppy seeds or sesame seeds
1 tablespoon minced Green Onion or Parsley
1 teaspoon Sesame Oil
1 teaspoon Low Sodium Soy Sauce
1 tablespoon Balsamic Vinegar
1 teaspoon chopped Chives
1 teaspoon chopped Mint
1 teaspoon finely grated Parmesan
2 tablespoons finely chopped coloured Peppers
2 tablespoon finely chopped Capers

I love this one.  My mum always makes it.  The garlic really livens up an otherwise rather boring plain green salad.  It's especially good on a salad of mache, hard boiled eggs and chopped bits of crispy bacon.

2 tbsp vinegar (I like cider)
5 tbsp olive oil
1 clove garlic, minced in a garlic crusher
salt, pepper

Not sure how your 4 year old would take to this but I use olive oil and balsamic vinegar on my basic salads and everyone loves it.. alternatively you can try olive oil and lemon juice.

I make mine the same as yackety-yak, minus the herbs... Sometimes I just drizzle some extra virgin olive oil and squeeze some lemon juice and S&P, and toss.

Has anyone used truffle oil on salads or even as a finishing for some dishes? Just wondering what it tastes like and what dishes it's best paired with... I have never tried truffles before so I suppose this is my way of getting a little hint of it, minus the price of truffles!
