mini stuffed peppers with home-made italian sausage and a side salad of spinach with yellow tomatoes.

Oh coco, I love stuffed peppers (capsicums here)!!!
My dad made them especially for me last year for my birthday along with cabbage rolls. How do you make yours?!?

Tonight dinner will be anything that is easy on my throat as it's still inflamed. Think scrambled or baked eggs might be nice smile

Chicken breasts tonight;  I'll butterfly them, marinade them in olive oil, garlic, thyme and lemon juice, then flash fry them with a little white wine to deglaze the pan.  They'll be served with griddled asparagus.

We have just planted Pak choi but i have never cooked with it, should be fun.

This is just cooked in the stock, Joobes. Also braise it. Depends on the dish smile.
