Mustard soup

I don't think I've ever heard of "mustard soup" never mind eaten it. And I've lived/worked in Lanarkshire for 2 years and Aberdeen for 2 years.

It sounds interesting.

My supper last evening was a rather boring cottage pie (one I cooked earlier).

Re: Whats For Supper?

The mustard soup recipe was given to us by an American friend, and originates in Gronigen, The Netherlands, and was totally delicious!

Serves 4
You need:

2 tbspns butter
1 finely shredded leek
2 tbspns plain flour
4 cups chicken stock
4 tbspns wholegrain mustard
salt and pepper to season
4 slices bacon, cooked until crispy

Melt the butter in a saucepan, add the shredded leek and sweat for 5 minutes or so. Stir in the flour to make a roux, and cook gently for a few minutes, then start to add the stock slowly, stirring all the time.  Once all the stock is added, simmer for 5 - 10 minutes, then add in the mustard.  Stir well, then simmer again for another 5 minutes or so.  Taste, adjust seasoning, garnish with bacon and serve.

Tonight I'm on my own, and will be eating leftovers!!
