Sundried Tomatoe Pasta
Amber,
Here is the Sundried Tomatoe Bacon Pasta recipe. I love it because it is quick and easy.
1 cup sun-dried tomatoes
3 cup sliced mushrooms
12 ounces uncooked penne (about 4 cups dry)
4 slices bacon, cut crss wise into 1/2 inch sections
3 cloves garlic, minced
1 cup sliced red onion rings
2 cups spinach (I omit this as my kids don't like it)
2 tbsp fresh basil (chopped) OR 1 tsp dried basil
1/4 to 1/2 tsp crushed red pepper flakes
Freshly ground black pepper (to taste)
Freshly grated parmesan
2 tbsp chopped fresh parsley
Pour 1 cup boiling water over sundried tomatoes and let soak for 5 minutes. Drain and chop. Set aside.
Place mushrooms in a medium bowl with 1/4 cup water. Microwave on high for 5 minutes. Drain and set aside.
Cook penne according to package directions.
Meanwhile, cook bacon in a large skillet over medium-high heat until crisp. Add garlic and cook 1 more minute. Add onions, spinach, sundried tomatoes, cooked mushrooms, basil,and red pepper flakes. Cook and stir for 4-5 minutes, until onions are tender.
Toss bacon/vegetable mixture with hot pasta until evenly distributed. Top with pepper, parmesan and parsley. Serves 4.
I tend to adjust this recipe according to what I have on hand and who I am serving. It is fine without mushrooms. I have made it without the onion. I made it once without bacon (oops!) and it's not quite the same!

Heres my recipe as requested. I made it last week and I had half a jar each of sundried tomato pesto and creamy basil an pinenut pesto so I threw in both, and it turned out nice. You can use either or, or bit of both.
Pesto, mushroom, and bacon pasta
(Serves about 4)
4 heaped tablespoons sundried tomato pesto (I add to taste)
1/2 cup cream
2-3 rashers bacon, finely chopped (remove rind and most of fat)
2 large mushrooms, finely chopped
1 onion, finely chopped
2 cloves garlic, crushed
1 large ripe avocado, cut into quarters and diced
Fresh grated parmesan cheese
Small spiral noodles (or whatever you like)
Olive oil
Saute the onion, bacon and garlic in a very small amount of olive oil until softened. Add the mushrooms and saute until softened. Add the pesto and saute for about 1 minute. Stir in the cream and simmer on the lowest heat until slightly thickened. You can add more or less pesto and cream if you think it needs it. Add a pinch of salt and pepper. Cook the noodles in salted/oiled water until aldente. Put the noodles into the pan with the pesto mix and combine. Serve in large bowl topped with avocado and parmesan.
