Sweet and Savoury Side/Stuffing dish

5 rashers of bacon
1 handful of sultanas
1 granny smith apple
2 tspns brown sugar
1 small onion

Slice and dice the onion
Core the apple and cut into thick slices
Quarter the apple slices
Trim the fat from the bacon and cut widthways
Cut the bacon into thin strips
Heat some garlic extra virgin olive oil in a medium wok
Toss the bacon in and fry on a medium heat till just about cooked
Throw in the onion and apple and fry, stirring constantly, until the apple starts to go soft
Sprinkle over the sugar
Throw in the sultanas
Stir fry and serve.

You can have it on its own (my house is bereft of food, so I had it on its own), as a side, or you can have it as a stuffing, like so

Blend the onion and the apple with 2 slices of bread cut the bacon into small pieces and continue as normal, then stuff into pork loin or whatever meat you fancy.
