Tomato and Nut Prawns with Sticky Rice

Tomato and Nut Prawns with Sticky Rice

Ingredients:

20 tiger prawns
2 beef tomatoes
3 plum tomatoes
1 small handful pecan nuts
1 small handful pine nuts
1/2 cup rice (that can be cooked to sticky rice)
1 lime
1 small handful walnuts
1 glass rose wine
A drizzle of double cream
Sundried tomato olive oil

Method

Roast the tomatoes on top heat in the oven until the skins can be easily removed. Remove the skins and place in a medium saucepan

Crush the pinenuts and pecan nuts and add to the tomatoes

Combine the rice with a cup of water and bring to the boil

Heat up the tomatoes and nuts, crushing the tomatoes with a wooden spatula.

When the rice is boiling, reduce the heat, cover and leave to simmer for ten minutes

Add the wine and cream to the tomatoes and mix in thoroughly

Turn the tomato sauce down to simmer

When the rice has absorbed the water, add the walnuts and the zest and juice of the lime and stir in

Fry the prawns in the tomato oil

Spoon the rice into 2 bowls, add the sauce then top with the prawns.

Recipe sounds wonderful, Beast. Will try it next weekend.

As for your aim to do an MA in Philosophy, good luck.

I have two post-grad degrees majouring in Philosophy. Wish there was some way I could help you.

With Philosophy, you either love it or hate it or stand ambivalent.

My pg degrees left me loving the subject. Wished that my daughter had chosen Philosophy in her degree. It is relevant, to my thinking, to all aspects of daily life/living.

Let me know if I can be of help- even as a sounding board.

Ah, excellent. It's always good to find someone who doesn't think a degree (let alone philosophy) is a complete waste of time.

I think that, two or three years ago, when I was doing the degree solely to have something to put on my cv, the prospect of a postgrad would not have appealed to me. Now, though, I'm quite happy to do the course simply for the sake of doing philosophy.

In Leeds (where I did my BA) I was initially interested in Philosophy of Religion, and developed a deep interest in Metaphysics (particularly time and space. I'm most intrigued by four dimensionalism and the B-theory, especially their relation to our perception of time 'as flowing' and free will).

The OU course concentrates on political and social philosophy, which I'm sure will be great, as I'm always willing to try out new things (hence the cooking).

Anyway, beans thoroughly spilled, I'll submit the post now.
