Sweet Pepper Chicken
Ingredients
2 chicken breasts
2 star anise
1 sweet pepper
2 tbsp sesame oil
A modest glug Tarragon Wine Vinegar
3 plum tomatoes
1/4 medium sized brown onion
Small handful curry leaves
1 lemon
Method
Heat the oil in a medium wok
Slice chicken into strips and add to the wok.
Heat chicken until white, then reduce heat to medium-low
Slice pepper into slices
Combine vinegar, lemon juice, pepper and curry leaves in a bowl
Add star anise to chicken and cook till the chicken is brown
Add onions and tomatoes and stir in
Stir in the pepper mixture
Whack up the heat to the vinegar is bubbling
Reduce heat to simmer and let cook for 10 minutes, stirring occassionally
Serve with rice, salad, or whatever you fancy.
Oh, and remove the star anise (if you can find it). I'm not sure if you can eat star anise, but it seems a bit strong to taste any good, anyways.
