Golgappa - India's number one street food-HELP

Does anyone know how to make the perfect Golgappa? (also known as pani puri)
The one's that you can buy are so hard and do not taste anything like the 'real thing'.
What is the magic ingredient that helps them stay crisp and firm?  help  help  help

Has anyone eaten Golgappa's?

I am sorry I do not know how to make the Pani Puri, I agree with you the bought readymade Pani  Puri are very hard.
There is a great Indian Recipes thread on the forum.
It is called ...Indian Recipes.... by Suresh Nair
Search this out and have a good search through the pages of it. It is a fabulous thread , full of information and recipes. If the recipe that you are looking for is not there then just write a message and I am sure that someone will post it before long.

When I "Googled" golgappa, I got alot of sites.  It looks very labor-intensive to me.  Just the same, they--and everything on Sureshs' thread--makes me hungry for Indian food.

Good news...I got up and attempted to make 'Golgappa's' today...another attempt!
They came out perfect!
I have taken some photos to prove it  www.golgappa.com
The family have just gobbled them down!!!
