Too much egg is where you may have gone wrong.

Also, try to rest the ravioli another 30 minutes onse made.

Dave beat me to it. 100g flour: 1 egg is the usual ratio for pasta.

I also use 1 whole egg to 100g flour ratio.
Pasta can be made with normal plain flour, if you are unable to obtain 00 gauge 'pasta flour'.
do not add salt to the pasta dough, heavily salt the cooking water instead.

If i can't get the 00 gauge...what would be more preferable? the more protein rich bread flour or cake flour which i believe has less protein?

plain flour works ok ..( plain flour= flour with no raising agent added)

have you tried a little oil  in the dough mix it helps soften it up thats what i got taught at tafe

When I make pasta dough , I only use egg and flour, I find that it will come together in the end with a bit of kneeding.
