Stopping apples from turning brown

Am thinking about making a cake that is topped with an apple jelly. To stop the apple stuff from turning brown the recipe calls for vitamin c to be added. I was wondering if I could use citric acid instead. I tried to find out on the internet, but found contradicting advice. Some say you can, and others say it has to be vitamin c. (It must be the same principle as with adding lemon juice, but as lemon juice contains both acids, I don't know what to think.

Does anyone know? I am really curious by now

Hi Susanne, I have always used orange juice to stop the apples going brown.

Thanks, but I know that the juice helps. Only the recipe calls for the powdered acid  not juice (I think to get a higher concentration) and as the juice contains both acids I wonder if I can use citric acid or if I have to ask for vitamin c at the pharmacy....  question

Alternaively, you can buy citric acid powder most places - butlemon juice is better - and more natural.

Citric acid I have (for making jam - helps it gel). I would much rather just use just the juice (recipe calls for juice of one lemon and a 1/2 tsp of vitamin c powder), but it's the first time I am making that cake and I am a little unsure.....
I might just try using citric acid (or more juice)...  (*scratching my head*)

I wish my oven was working!!! (Now I have to make all these cakes that don't need baking  yikes  yikes  yikes  - There are 2 times a year when my oven just can't break: Christmas and Campus Fest (my uni's annual open house) week!!!!  yikes  yikes  yikes  yikes  yikes

water and lemon juice i always use you may also try  apple vinegar never use it but i think that it must work

Over here, powedered vitamin C is called Ascorbic Acid. You can by it at health food stores and some supermarkets.
