Apple cake recipes PLEASE!

Okay, my apple pie went moldy as I can't eat another bite.  But I'm inundated with apples.  Anyone have a particularly nice apple cake recipe?
I thought I saw a thread on here to that affect but for the life of me I can't locate it.  Thanks!

Just put thinly sliced apples, sprinkled with cinnamon and sugar, on a butter cake before cooking

If you need to use your apples and can't see any more pie, try making chutneys etc. too, maybe. I was served fowl filled with apples and onions once (I think it was either goose or a game bird - I just remember that it was darkish and had a great stuffing) - delicious.  whistle

B.C. Apple Cake

3 eggs
1 1/2 cups oil
2 cups white sugar
3 cups flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla
1 cup pecans
3 cups cored, peeled, diced apples

Mix all ingredients together and pour into 9 x 13 pan.  Bake @ 350F for 45 minutes.

Icing
4 oz butter
1 cups packed brown sugar
1/4  cup milk

Cook icing ingredients in a small saucepan for 2 1/2 minutes.  Poke holes in the cake and then pour icing over cake. yummy

That sounds really good, Kimber.  Think I'[ll make it this afternoon.  BTW, why is it called "B C?"  Is the recipe really that old?   lol

I'm not sure about the name - I got the recipe from a friend!  (But since I do live in Canada, I'm guessing it refers to British Columbia - they do grow a lot of apples there!)  Hope you enjoy the cake! smile
