Vine Leaves

I have a pub in Devon and I am taking over in the kitchen.  I am not commercially trained so it's going to be a fun ride.  I want to provide the Veggies down here with something other than broc & pasta bake!  I have recently found a recipe for stuffed vine leaves that looks easy to prepare, but at the same time would look good on the menu.  Does anyone know an online site where I can get some?  I have Googled, but didn't get much luck!  Thanks smile

There are places in Bournemouth that sell multinational foodstuffs, and I'm popping past one later on, so I'll ask. I know they do stuffed vine leaves in tins, as I've bought some myself, and there is an array of different leaves in boxes outside, so I'll look and see if they have any vine leaves and if they are prepared to take orders online.

I'd give links but cannot remember the names of stores to type in, I know one in Charminster called Makkah Oriental Food Stores run by Mr Khan, but not sure if he's got a web address.  Will google that one and put any link in if I find it.

Might be worth having a look at Greenline Organics, in Chulmleigh, Devon.

They have an online store, and their prices look good.

Looks good for organic and free-trade dried and packaged foods, so there may be other stuff you will find there.

Generally, as Khaines said above, you want to check out "ethnic" stores. Halal markets and supermarkets will almost always stock vine leave in brine, in jars or cans (that's where I buy mine).

It might be also be an idea to investigate local vineyards - there are a few in Devon - I know the nearest vineyard to me - near Leeds - gave me loads when I visited them in summer, and a great pile of sarmientos (dry vine trimmings) when I visited them after pruning - they are great for barbequeing.

You might also like to think about doing stuffed Cabbage leaves, and stuffed Chard leaves, which are the "northern" equivalents of vine leaves. Look up recipes for Sarmale or Holishkes and Galuptze as well as dolmas, dolmades, or dawaly.

A great thing about stuffed leaves is that you can prepare them in bulk, and keep them, in their liquid, refrigerated or preferably covered with olive oil,  for a couple of days. Small Vegetarian stuffed leaves are often served cold as appetizers, as in meze or tapas, and can also be served hot. Meat stuffed leaves are always served hot. They reheat really easily, and are often better on the second day anyway.

There are lots of recipes available on the Internet, and some good advice too.

Just as a final note. While I was in Egypt last year, I saw cooks making dolmas in a neat portable machine. It was a bit like a cigarette rolling gadget, but larger. The leaf was placed in the machine, a spoonful of filling added, and a slider pushed across - and a perfect dolma dropped out! I tried to buy one without success, and I haven't seen them anywhere else, but someone must produce them. It didn't look expensive - and explains why so many prepared dolmas you see are so perfectly regular. I've tried to find the machines, but so far without success. I have found a mention of them - and the pictures look similar:-

I've popped into that store earlier - it is called Asia Shop, they had what looked like vine leaves, but they don't do online unfortunately!!  Had a good rummage around.

Good point Geoff made about the vineyards!  smile

Should have bought a tin of stuffed aubergines while in there - love those!!
