When I find a good deal on chickens, I will roast a whole one up at the beginning of the week, and then bring in 1/4's of it throughout the week. Roasted chicken is great because you can eat it heated up in the microwave with some leftover sides from last nights dinner, or you can chunk it up and eat it cold added to a salad. With so many ways to switch it up, you don't get bored!
