Seafood rice

Hi guys, since summer is coming up soon I thought I'd share with you one of my favourite recipes for this time of the year.
Its quite simple although it takes some time to prepare.
The seafood varieties are left to your choice, although obviously the more varieties the merrier. I'll leave some examples.

So for 4 you'll need:
Olive oil
3 cloves garlic
1 can tomato
2 cups of rice
bunch of coriander
1 bay leaf
shrimps
crab
lobster
mussels
clams

If you use shrimps, crabs or lobster cook them first (the best way I know to cook shrimp is cold water, salt and as soon as it starts boiling take them off the heat and rinse them in cold water for a few seconds then place some ice cubes over it, this will give the meat the perfect texture).
Dont forget to keep the water where seafood was cooked.
Peel the shrimp and insert the heads and skin in the water where you cooked them, add the bay leaf and cook in low heat for about 30 mins.
If you use mussels or clams you dont need to cook them in advance.

Get a pan with the olive oil and fry the garlic thinly chopped, add the tomato and cook for a few mins.
Filter  the water where you’ve been cooking the heads and skin of the shrimp (or other seafood) and add it to the pan (about  5 cups or a tad more as its not supposed to be a “dry” rice).
Let it come to a boil then add the rice.
About 3-5 mins before the rice is done insert the clams or mussels if you have any.
Shrimp, crabs or lobster insert them only about 1 min before the rice is done.
Sprinkle the coriander chopped all over it and serve immediately.
This is the perfect recipe for a “vinho verde” although a white or pink wine will also be good mates for it.
