King Crab Risotto

Hi everyone, this recipe isnt mine (wish it was) its from a well known chef that owns a restaurant in Lisbon. Hes someone I admire and I've cooked this recipe a couple of times and its always been kinda showstopper among the guests so I thought I'd share it with you. Its not a portuguese recipe evidently  wink
I admit its not a cheap recipe but its perfect for a special occasion.

I wont go through all the steps cause most of you know them better than me. In case anyone has doubts I'll be more than glad to help.

For 4 you'll need:
risotto
seafood stock
2 legs of King crab
a bunch of spinach
2 black truffles

Boil the crab legs, in case you buy it fresh and reserve. Boil the spinach and reserve.
Make the risotto the usual way with the seafood stock (I usually add 1 teaspoon of saffron at about 3/4 of the process). Small note for those who dont know, seafood risotto wont be added parmesan in the end.

So after having all this done here are the steps:
1- make a "bed" with the spinach in each plate
2- fill a small bowl with risotto (to give it a round shape) and place it over the spinach
3- put pieces of crab on top of the risotto (off the shell)
4- sprinkle with thinly chopped truffles over it.

Thats it!

Again I'd advice a nice Vinho Verde, although a nice white wine with good acidity will do the trick too!
