Hi All,
With the summer holidays on, lots of students will be preparing to go to uni. I put together the below for recipes that would be suitable for the student lifestlyle. Whether you are a parent who is helping to prepare their son or daughter, or a student who loves indian food but doesnt want to spend time and money on preparing food, I've got some ideas which will really appeal.

Yes I agree, I am a vege who loves indian food so the more recipes the better ![]()

I like the idea of food for students... However I would be interested in any recession type buster meals... things that taste good are healthly and cost effective.
I live on my own however have couple of friends over regularly.
so my budget would be £7 me on my own and up to £20 for a group of 4 friends over. What would you suggest?
Your advice would be appreciated.

Firstly, thanks so much for the encouraging words-so kind of you.
Secondly; the challenge!
I dont think cooking vegetarian Indian meals has to be expensive. I will assume for simplicity that you already have the spices and the rice, but here are a few ideas;
A meal for 4 under £20:
starters: Home made paneer marinated in roasted spices and hung curd. (use a gallon of milk to make the paneer, and then hang curd in some cloth and add spices).
Main Meal: Spinach, dill and fenugreek curry (recipe is in my blog)
Kidney bean and sweetcorn curry (made with tinned corn and kidney beans and using freshly grated ginger, a chopped onions and some garlic)
Masoor Daal: buttery, gently spiced lentils
Jeera Rice: fry off cooked and then cooled rice in sauted onion, star anise, bay leaf, cloves, cinnamon, and pepper, then add a squeeze of lemon...its so aromatic
Optional: naan
As a desert: Yogurt cake, I know, it sounds bizzare, but its just normal cake, with yogurt added to it and the cake is ultra moist and has a little sourness to it. I soak into it a lime and rose water syrup. I add spiced of cinnamon and cardomon to the cake, as well as saffron, to give it that indian sweet dish taste. goes down well.

There is only one thing you need to know when thinking about veg Indian and that is Aubergine!
Nothing else matters.
You can make Aubergine taste like any type of meat.

Hi Abdull, I agree with you.. However have you tried Quorn or Mock meat gluten to give you the different types of textures...

Google "tarka dhal" recipe. Endless variations with roti/chapati. In my experience of cooking for my veggie daughter Quorn needs more added liquid and tends to absorb the "heat" in spicy food more than meat.
