Jamies chicken maryland

Hi,
i cooked this dish and i dont like banana so i stuffed the chicken with a little of the cream, garlic, sage and olive oil (all liquidised together). What else could you stuff the chicken with? Otherwise what could go well with this dish. I did it with tagiatelli. Any other ideas?   big_smile  smile  big_smile  question  question  yummy

Re: Jamies chicken maryland

I think that I made this recipe, but it was with the Chicken whole legs pieces, so there wasn't stuffing involved. But I found it just too fatty when I followed his recipe, so can I piggyback your question and ask, should I have cut fat off the legs? I think the skin was still on, does that mean it will always be fatty? question

Re: Jamies chicken maryland

If you cook meat very slowly &or very fast the fat should melt away for the most part, basting th meat as it goes. Im not fmiliar with the recipe your looking at though so Im sorry not to be of more help Joy.

Chicken maryland stuffed with banana? Hmmm if I was replacing the banana maybe go with dried apricot? Chicken & apricot work well together.

Re: Jamies chicken maryland

This is the recipe I followed (I am sure it was called Maryland in the book! hmm )

I loved the chicken meat when I made it, but I couldn't stomach any of the rest of it.

Maybe the book had both these recipes and I got them mixed up in my head whistle

Re: Jamies chicken maryland

I followed the exact recipe from Jamies book and it was delicious - slightly unusual dish but lovely - would recommend!

I have made it with the banana...it was amazing how rich it made it; good though.

Re: Jamies chicken maryland

That is a family favourite in our house. I halve the cream and wine and butter as I find it to be far too much otherwise.

We eat it a lot.
