Hello,
I am looking for some help on the Chicken Tikka Masala recipe. I have tried this dish serveral times and each time the sauce is far too thin, when served it all just seems to be a wattery mess. I leave it reducing for a while yet it never seems to thicken.
Would it be possible to leave the water out of it, or drain the juice out the chopped tomatos before adding? I'm not sure if this would ruin the flavour?

Yes! Leave the water out. I had the same problem first time and now leave the water out and it is perfect. If you find it getting a bit thick, just add a little water to your liking. Flavour is much better without the water as the water dilutes the flavours. Add the tomatoes with their juice, it is only the water that causes this dish to be too runny.
I have the same problem with the bolognese sauce in this cookbook too and just put in 1 tin of water instead of 2.

Looking at the picture it is still a bit runny so could maybe try leaving out the juice of the tomatoes. If you want it a bit more tomatoey you could add some tomato paste/puree (the thick stuff).

Never had the problem myself. But you just have to leave out the water. That is don't add the water right away. If the sauce ends up too thick add it little by little as needed.

i always leave out the water in that recipe....some of the other curries in the MoF book are also a bit too runny IMO, so i just leave out some or all of the water to start with and add some later if necessary

Is it possible to make this and freeze it?
My wife is due to give birth in 3 weeks and I was hoping to bulk cook a number of dishes and then freeze them so I can just take something (decent and healthy) from the freezer, maybe add some rice or something and serve quickly.

You may want to re-think the curry. I know many people will disagree with me here, but if your wife is planning on nursing, the curry may disagree with the wee babe's tummy. You may want to start out with some milder stuff and work in the spicy foods once you see if the baby is colic-y, or not. Just my opinion, though - Indian mom's eat curry all the time and don't have a problem.

Thanks for the tip and the well wishes, I might re-think the curry for my wife, but could be selfish and make some for myself anyway!

I breast fed all my boys and found that if a food gave me no problems during pregnancy it gave neither the baby or me any trouble during the next stage, ie nursing the baby and weaning, mine all now eat food from all over the world with no trouble.
The calm restful atmosphere if it can be managed is much more beneficial to a calm baby and healthy nursing. Good luck to you and your growing family.

Can't say anything about curry and nursing, but YES, YOU CAN FREEZE IT. Done it. Nice thing to have in the freezer for busy days ![]()
