Steak mince and Shin of beef

I took a wee offer up from a great online butcher (who I see advertised above) and bought 8 packs of steak mince and 8 packs of beef shin ( oh and some haike too) for a very good price! Sorry, I love a bargin and in this economic climate what else can you do?

I have lost ideas to cook my lovley bargins(exept the haike as I'm a fish virgin but the OH takes control of that  yikes )!

Mince n tatties, burgers, lasange, steak pie, beef''n' ale pie ( you get the drift) all the usuals!

Can my fellow posters help me with a new idea , I've tried every cook book and online site I can find but mince seems to be the one I can not expand my cooking challange on! The shin of beef can be explored more but even at that there is only so much you can do!

I have a 7 & 1  year old to throw into the mix so as you can understand it's not so easy  lol

I think I'm past any chef's help but any ideas would be amazing folks!

My family love wraps made with mexican flavoured mince and a variety of salads, we put everything on the table and people fill up the tortillas with whatever combination of things they want.
Easy and fun.

Good luck with all that meat.

I can't find the exact recipe, but on the show, she recommended using beef shin for Borscht:

I've made Daniel Boulud's braised short rib recipe,  it's good, makes a ton of food though, sorry I don't have his book, my sister relayed the recipe to me, it's from 'Daniel Boulud Cafe'.

Stuffed peppers and stuffed cabbage are always good with beef mince or a mix, I've posted a few recipes on this forum, you might try the search feature if interested, I have to run or I'd search for you.

A friend of my mother's has been making her Bobotie, haven't tried it myself but is lightly curry spiced with savoury custard topping, she says it is good, makes a change from the usual cottage pie etc. South African housewife's favourite, tons of recipes online this one from inmammaskitchen.com
2 tablespoons vegetable oil
2 onions, peeled and sliced
2 1/4 pounds good quality lean ground beef
1 thickish slice of white bread
1 cup milk
1 tablespoon medium curry powder (or hot for the hale and brave)
1 1/2 tablespoons sugar
2 teaspoons salt
freshly grated pepper (about a half teaspoon)
3/4 teaspoon turmeric
1 1/2 tablespoons malt vinegar
1/2 cup seedless raisins
2 tablespoons strong chutney
2 bay leaves (or fresh lemon leaves if available)
2 medium eggs
METHOD

Preheat oven to 350°F.

Heat oil in medium sauté pan. Stir in onions. Cook over medium heat until transparent. Add ground beef. Cook until lightly browned and crumbly.

Soak bread in half the milk, squeeze out excess milk and mash with a fork - DON'T TOSS SQUEEZED OUT MILK! Pour it straight back into remaining milk. Set milk aside, and ad pulled-apart bread to the meat mixture.

Add curry, sugar, salt, pepper, turmeric, vinegar, raisins, chutney to the beef mixture. Spoon the mixture into a greased baking dish, and place bay leaves on top.

Bake for 50-60 minutes in preheated 350°F oven.

Beat egg with remaining milk and pour over mixture approximately 25 - 30 minutes before end of baking time.

Serve with steamed rice (traditionally yellow!) and extra chutney.

Pure South African comfort food! Especially nice in winter, or cold with a salad in summer.

Serves: 6

As for shin of beef make hearty beef and stout casserole, cooked long and slow any leftovers I usually make into a curry!
