Hi all,
Going to be cooking Jamie's Mushroom Risotto as appeared in his "Cook with Jamie" book.
The only thing is that I will be only cooking for my wife and I and the thought of having risotto all week is looking boring (recipe shows it makes for 8) and thought of freezing the risotto base makes my blood run cold (I tend to be a purist with these things even though I'm a novice cook).
So can I just use a fourth of the recipe ingredients, is it that simple, or am I best making the batch for 8 and freezing the leftover base (don't like the idea but don't want to waste it)?

I would just half it and have it for lunch tomorrow. You could just quarter it if you wanted to though, I've done that with loads of recipes.

I would half it and make risotto cakes with the leftovers for lunch or dinner with a salad the next night. Actually just make the whole lot and then make risotto cakes because i find that people always eat larger serves of risotto than the recipe states.

I often have to halve recipes for OH and myself, but it rarely goes so far as quartering. The idea of risotto cakesis fascinating - how d you make them?
I generally find with rice dishes that you need three tablespoons of uncooked rice per person, if that's any help. ![]()

Hi, you basically use 3-4 cups of left over risotto and add an egg, mix well and shape into small patties. Heat OO in a pan and cook until browned and crispy. Serve w/ a salad and a hearty Fall soup would be nice, good luck! Oh, some recipes tell you to dust the cakes w/ flour and then fry but it's up to you.

I add chopped parsley (and some toasted pinenuts if they "go" with the risotto mix) to the egg and rice mix and dust with polenta instead of flour for a bit of texture. It's much easier to shape them if your hands are wet, but you probably knew that ![]()
