Porkie overload!

did a huge roast shoulder of pork. with the leftovers i did crispy chinese pancakes (i would recommend this to anyone when they have leftover pork, chicken, especially turkey at christmas - so simple and tastes absolutely awesome!) and i did this stroganoff thing....

more ideas please! was thinking about a pie maybe? like a chicken and mushroom type pie? except with pork and squash maybe? would that work? having a crisis of confidence kitchen wise!

Bao!  Little steamed buns filled with hoisin flavored pork.  I think I have my recipe in Foodwise.  I always stock the freezer with them when I cook a whole shoulder.  Dang they're good.

I usually mix the meat with homemade BBQ sauce one night for pulled pork sandwiches.  I will make nummy little slider-sized brioche buns.

Then one night I saute the meat with onions, peppers, chili powder, cumin, cayene and salt and make tacos. 

One night (usually the first night if it's not smoked) I'll serve it like a pot roast, with potatoes, carrots and onions.  If I have drippings, I'll make a traditional gravy.  If not, I'll make a chunky rustic roux gravy with mushrooms, onions, and little diced pieces of pork.

You can put dang near anything in spaghetti sauce.  I'm making some with pork tonight, actually.

Or make a casserole with tortillas, tomato sauce and cheese.

A pie would certainly also work.  Maybe a cottage pie with mashed potatoes on top.  I'd go with root vegetables in that.

Pulled Pork Sandwiches
Take your leftovers, toss 'em in the crockpot with a jar of salsa, and shred it up for pulled pork sandwiches.
Cook on Low for 8 hours, or High for four.
You can also use a homemade BBQ sauce instead of the salsa; 1 cup ketchup, 1/4 cup sweet mustard, and 1/8 cup of honey or brown sugar.

Fajitas
chop up pork and season it a bit more with cumin, cayenne, taco like seasonings, and use it for fajitas.
Also, if you have a meat grinder or even a food processor, grind it well, add some mayonnaise and maybe some relish for a sandwich spread.
Also, good, chopped up in scrambled eggs

Pork Stew
It is really good made into a stew.
Potato, carrots, green beens, onion, celery.

I love just a cold pork sandwhich with mustard, mayo, red onion and cheese.  A childhood thing for me.
Maybe try making a roast pork hash with fried diced potatoes and onions.

I once bought a whole free-range chicken for just the two of us, and stretched it out (not literally lol  lol) over a week. OH didn't even realise, as chicken as so versatile! big_smile
