lovely spanish chorizo and fresh just picked veggies and fruits

I live in Spain in the country. Where all the food is scrummy and fresh. Olives and olive oil are abundant as is garlic and tomatoes.
I am new here today so I am not going to write too much.  Just if anyone wants to cook a paella like a native then I can tell you.

1 cup olive oil
1 onion
4 big garlic cloves
1 cup of red and green peppers mixed
half a kilo chopped chicken
500grms raw peeled prawns
about 12 big prawns raw shell on
about 12 mussels cooked in half their shell
1 tin of chopped tomatoes


1 teaspoon sweet red pepper powder
1 teaspoon oregano
a couple of shreds of saffron
or if you can buy it, try to get the special mix for paella that comes in individual sachets
large glass of red wine
appx 500g of round rice

you will need a large flat bottom heavy pan to do this properly.
1 peel and chop the onion and garlic
2 add together with the onion and garlic the chopped up peppers
keep all this to one side while you heat up the olive oil in the big pan
once the oil is hot add the onion, peppers and garlic, fry gently turning occasionally.
3 once the onion etc., is softened add the chopped tomatoes stirring it all in together.
4 add the chopped chicken and the wine and leave to simmer for about 10 mins adding a little water if it is too dry.
5 add the oregano and saffron with the sweet red pepper powder and stir.
6 add the peeled prawns.
7now gently cover the whole thing with the rice.
you will need to cover the rice with cold water so that there is about half an inch of water covering it.
8 bring the pan to the boil and then simmer for about 5 mins.
Do not stir this dish just move things about gently with a wooden spoon so that nothing sticks.
9 now place the raw prawns on top with the mussels.
If you need to add a little water do so.
10 when the prawns are cooked turn the pan off and cover with a tea towel for 10 mins.
11 take the tea towel away and serve with lemon wedges and a nice loaf of crusty bread.

Yes indeed, can you open another tab?  First select/highlight the text by clicking around it, then 'copy', select the thread link, then 'paste in the qucik post box.  If you have trouble, I'll do it for you, just let me know. wink

If you can open another tab, it just makes it simpler, you'd have Jamie forums up on both tabs, you copy on one, paste into the other. Presto-chango, easy-peasy, well, I hope it will be for you.

MsPablo, I cant do it.  I am new on the computer too.  Monday a friend of mine can show me what to do but in the meantime, please can you do it for me.   I wont keep bothering you all the time.   Many thanks . crossed

lorybo, I pasted the recipe into the 'regional recipe' thread.  This was the first forum I ever joined and I had no idea what or how, so don't worry, you'll get there and there's always someone around to help.  I hope everyone is nice to you. smile
