what are the best fish for a fish pie?

prawns?
some other shell fish
smoked haddock?
a different smoked fish

I would choose firm white fish like monkfish, sea bream or cod. Smoked fish would be a bit strong flavoured I think, I like fish pie to be more delicate. Fresh salmon or trout might be good, too.

If you want shell fish, other than lobster I would be afraid of it's getting overdone neutral

Well now that depends:

Where do you live, ie what fish live in local waters?
Do you care if they are sustainable?
How much do you want to spend?
Is it an "everyday" fish dish, or a "celebration" one?
What do you mean by "pie", ie topped with pastry as in "Stargazey Pie" or mashed potato or similar?
Will it be just fish, or with veg?
Closed-top pie, or open, ie  do you need a variation in colour as well as texture/taste?
...............& probably more questions, who knows?

good selection of fish around ireland, not gonna start naming
i'll spend anything that will give me a good dish
it's a everyday fish pie, but i would like the best
topped w/mash
no veg, maybe bits of tomato if a recipe calles for it
colour and texture variations arnt essential
different tastes would go far

have suggestions?

I like to mix two-thirds white fish (such as pollock, cod or haddock, or coley) with one third smoked haddock or cod.  Either that or poached salmon is lovely  yummy

Smoked Haddock is a big must for me, but as Jamie points out, rather undyed.
I find rock salmon lovely but it's not always available.
If you ask your Fishmonger and tell him what you're up to he'll sort with out with some appropriate offcuts...

Just be aware that rock salmon is shark, and apparently pregnant women should avoid eating that.  I'm not sure what the real medical advice is but my pregnant friend was talking about it the other day.

My best fish pies include a cod loin, a generous handful of raw prawns, a fillet of smoked haddock.  Lots of white wine and leeks in the sauce.  Mix an egg yolk into the mash, and make it with double cream rather than milk, and lots of butter of course.  I love a grating of nutmeg on top, too.
