DISSAPOINTED

Hi my name is kellie i am a mum with 3 small kiddies, and i absolutely love cooking,
I am always reading through my collection of ur books and getting great idea's for the family meal planning, But this week i finally decided to buy EGGPLANT hhhmmm i wondered how do i use this veg or even cook it, as i thought i would try something new......
so i got out my famous Jamie Oliver books and  was frantically trying to find a simple recipe for EGGPLANT!!!!!! hence why i am disappointed is because i couldnt find one recipe tongue....
So i would love to hear back from you regarding my situation as i am keen and eager to try this new veg..... help

hey, i don't know if you're gonna like this recipe, but it's a Filipino Dish... (maybe you'd like to try something easy and exotic?) big_smile

Making eggplant torta is really simple. Just get two or three eggplants. Wash them and pierce all over with a fork (this is to let the steam out when you roast them and not have them go kablooey on you).

Roast the eggplants on top of your stove, or under the broiler until the skin is charred. Take a paperbag or plastic bag and put the eggplants inside (this will soften the skin to make it easy to peel later). After 15 minutes, take the eggplants out and peel off all the charred skin. You'll be left with the eggplant meat with the stalk still attached to it (don't get rid of this stalk, I'll show why later).

Now prepare your eggs. Take 2-3 eggs and scramble them. Now get a plate and put an eggplant on it. Mash the the meat until you get it to fan all over the plate. Put about 1/4 cup of scrambled egg onto and under the eggplant. Use the stalk to lift up the eggplant and to slide it onto a hot skillet with a little oil. Fry each side for about 3-4 minutes and then lift and put on a serving platter. Do the same with the other eggplants.  yummy cool

There is a nice sweet eggplant pasta recipe in Jamie's Kitchen (I think).

Jamie's books don't cover every ingredient you are likely to buy. If you want a book for that try Stephanie Alexander's The Cook's Companion.

The best way to enjoy eggplant for people who don't have much experience cooking and eat it is by frying it.  Cut the eggplan into 1/4 inch thick round slices and place on a cookie sheet.  Salt and let it stand for 15 minutes or (this takes the bitterness out) turn it over and salt the other side too.  Then rinse the eggplant and pat dry.  Season with salt/pepper, dredge through a little bit of flour and then pan fry in olive oil until golden brown.  Should be crisp on the outside and soft on the inside.
