Red cabbage salad!
This one is inspired by the traditional cabbage salads from Südtirol. You need the following:
Half of a medium-sized red cabbage
Fennel seeds (2 spoons)
Speck (100 gr)
Mustard (to taste)
Olive oil (to taste)
First off, cut the red cabbage as fine as possible. It is quite important, since it can be rather tough! Meanwhile, cut the speck in small pieces and put into a pan together with fennel seeds. Gently roast the seeds and the speck until the latter gets slightly crispy. Let it cool and add to the cabbage. For the dressing, mix olive oil and mustard, stirring strongly until you get a soft cream. Mix together...Buon appetito!!!
