Debs....help please ! ..melanzane sott'olio :)

i've  been making some preserves/sauces etc (gotta get rid of all those bottles and jars in the garage  lol ) and i wanted to make melanzane sott'olio.....  my Mum used to make them but  i've forgotten the d@mn recipe   sad  .....i know she used to slice the aubergines then salt them but i can't remember whether she cooked (steamed /blanched?) them before putting them into an oil & vinegar mix or just put them in raw....i THINK they were marinated with chillies and mint too...might have been basil .....anything else ???  help

Yes, I want that recipe also.  My eggplants are just starting to come in and I have high hopes.  I would think they would have to be cooked somewhat in order to preserve them properly.

3 kilos of aubergines
1 ½ litres of White vinegar
A few basil leaves
5 cloves of garlic
EVOO
Salt n pepa
Pinch of chilli
1.wash and slice the aubergines about ½ cm thick, lay it out on a surface that is inclined to one side, salt hem well and leave them to drain for 12 hours.
2.Bring the vinegar to boil in a pan and blanche the aubergines in it for 2 mins, drain them and leave them to dry. In a pestle and mortar grind all the herbs and garlic and cover all the slices of aubergine.
3. put them in jars pressing them down to get rid of the air and then fill each jar up with EVOO.
Cover the jars but don’t close completely, check them after 2 days and if they have absorbed the EVOO add some more to fill the jars and then close them tight.

Thanks Debs....I don't think my 5 little plants will yield 3 kilos at one time, but you never know.  I can always supplement with some I buy at the farmer's market.  Anyway, my OH lived in Naples for 2 years and he loves this.  Thanks.  My mom never made this, and I don't know why.  Dad always grew eggplant and made lots of caponata.

I'm gonna wait till my mamma comes back in Aug to do them, but I'd like to do passata when my niece is here so I can teach her and thats another generation done!!  lol  lol  lol

I think a crate of aubergines here will cost me about 8€ and the 5 litre bottle of EVOO is also 8€ not bad really.
