What to do with left over roast beef??

I roasted a lovely piece of scotch fillet but have a decent amount left over.  What other than toasted sandwiched and a thai beef salad (done tonight) can I do to use it up, as I cant stand waste.
PS too good for the dogs!!!

I made cornish pasties with mine when I had some left over from a 6kg rib at christmas.

A lot of left over meat is turned into a cold salad:

green beans, 1 purple onion cut into rings, 2 large cooked potatoes (leftovers are perfect) 2 Tablespoons oil  2 Tablespoons vinegar  1 teaspoon sugar or more to taste 1/2 cup water salt, pepper, garlic powder to taste


Cut the beef into bite size chunks, beans into 1 inch pieces, potatoes into bite size chunks, put into salad bowl along with the onion rings.
Take the oil, vinegar, sugar and water with seasoings and mix well.
Pour dressing over beef and veggies, chill in fridge at least 2 hours.

Cottage pie (Shepherds pie).  With a little cheese on top.

But I will also use leftover roast for a second night of roast, slicing it, putting it in a little gravy, covering it, and heating it in the oven.

dad used to make fritters with any meat left over. as kids we loved it with tomato sauce. now our house never has left over meat for more than a day. 3 carnivores and a dog fixed that problem.

I also reheat in gravy and serve again Or the boys have it in sarnies with mustard and sliced red onion, tomato, and S &  P.

Oh, my mum used to do fritters with roast lamb, and we'd have those with tomato sauce.  They were so yummy.

Roast beef hash.  yummy

Cut raw potatoes into small cubes.  Finely chop an onion.  Heat butter and oil in the skillet.  Mix the meat with the potato, onion, salt and whatever herbs you might fancy.  Press into the hot fat and cook for about ten minutes each side until well-browned.  Serve topped with a fried egg.

Shredded and heated with barbecue sauce, serve on a brioche roll or kaiser roll.
