sandwich van ideas
hi all i have a small mobile catering van in manchester and i,m looking for some ideas for hot daily specials to keep my customers happy have tried so far chicken curry , lamb hotpot,but to much prep and wastage many thanks ... gary

Hot meatballs with marinara sauce, provolone cheese, sandwiched between 2 slices of garlic bread. Yum! It requires prep but meatballs and tomato sauce definetely freeze well.

Yep, thick chunky soup and a crusty roll, should keep your punters warm. Its cheap,easy to prep/transport, if meat free its no problem to keep hot ( I'm sure you are aware of keeping food at correct temp/time) and most welcome in this dreary weather.

Panninis in cold weather if they can wait a few minutes for them. I know everyone does them but there's a reason for that. I always go for a panini over a normal sandwich in winter. Why not rent a toaster and see how it goes?

I like the idea of a nice mug of soup and chunk of fresh bread , those soup cauldrons are I think not too expensive .
Different vegetable soups on different days of the week .
We had a fallafel van that use to be buy the park , all he sold was hot fresh homemade fallafel in a thickish round pitta bread full of salad and if you wanted homemade hummus , you added the sauce you wanted yourself.
This was such a sucess that he moved to a small shop .

You don't mention what cooking facilities you have on the van, but if you have a hot plate and a grill then Madhur Jaffreys Naan breads are really good....they can also be cooked before hand and then warmed through

They're really nice just served with a dip and apart from myself many members here have said her recipe/method works well.

I love the soup idea especially in winter. Also love the falafel in pita one for any season. The Food Network here did a whole series about "The Great Food Truck Contest" or something like that. One of them specialized in pulled pork barbeque sandwiches, another did Bahn Mi (sp?). I think the winner just did burgers, but they were very good burgers. There might be something on their website.
