I just saw your question, I have SO many wonderful pumpkin recipes! One of my favourites I got from this site, thanks Jamie Oliver!

This is the one I will aim to make, because I haven't got around to it yet. You might like to try it too?
Torta Di Zucca (from Guy Grossi)
Pastry:
Sieve 1 1/2 cups flour
Mix in 1 tsp salt, 2 tsp fresh chopped sage, 2 tsp fresh chopped rosemary
Rub in 100g softened butter
Mix to a dough with 1/3 cup water, wrap in clingfilm and refrigerate an hour, or overnight.
Filling:
1.5 kg pumpkin in small pieces, season with salt and pepper. Bake 15 mins at 180C or until cooked through.
Cool, blend.
Heat olive oil, saute I leek white, finely chopped, until golden. Take off heat.
Mix in the pumpkin, 1 up grated parmesan, 1 cup grated gruyere, 2 eggs and 1 tbsp softened butter.
Roll out pastry to line a 20cm pie plate. Fill. Cover with remaining pastry.
Bake at 180C 30 - 40 minutes until golden.
Serve hot, warm, or cold.

I made pumpkin risotto tonight with dinner. It was really good and none of those pesky "pie" seasonings!
I roasted it with olive oil, fresh rosemary, salt and pepper. It was so good. I could have eaten it just like that. I'll be making it again on the 1st! Now I feel inspired to try other recipes!!!

To tell the truth, I really don't like pumpkin............I mean, I grow them & they do very well, & so I'm obliged to eat them, but I'm not fond of them.
I really don't like them in desserts at all...........I tend to make a Curried Pumpkin Soup, which because of all the other flavours prevents it tasting too 'rooty'.
I made Pumpkin Pie one Hallowe'en at the Farmshop I worked at for the customers to try (which boosted pumpkin sales astonishingly)................most people loved it, but I didn't!

.............I have to say I don't feel like this for other squashes though!
I adore Butternut Squash...........it isn't as cloyingly sweet when cooked.

Pumpkin pie was my only experience of winter squash as a kid. It was a relief that to me at that age that some vegetables could be made into desserts.
