Need salad dressing without vinegar
Hi please help,
Although I adore salads, I cannot abide vinegar in any form. Its a difficult existance, I have tried for years to overcome my aversion to it, but alas, its just one of those flavours I cannot stomach; and therefore anything pickled goes out the window too! I tend to just toss salads in a little olive oil, citrus juices etc but its so boring. If anyone has any ideas for dressings without vinegar and a good salad to accompany it it would be much appriciated. The subtler the taste the better in my opinion, I dont want to overpower the taste of the salad itself. Thanks!

Re: Need salad dressing without vinegar
I eat my salad without dressing most of the time, just a little salt and pepper. Have you tried just putting some fresh herbs in it to give a bit of a punch?

Maybe a yoghurt based dressing? Yoghurt that's fermented for a while has a nice tang, as well as viscosity. Mix it up with a bit of olive oil, some salt, and for an extra kick a bit of freshly grated horseradish.

1 heaped teaspoon of mustard, 5-6 tablespoons oil and 2 or 3 of water, chopped shallot or garlic.
1 tbsp Nuoc mam sauce, 1 tbsp Pulco lime juice, water, chopped shallot or garlic....a little honey to take away the salty taste of Nuoc mam.
50 g of blue cheese, 3 tablespoons sour cream, 1 tablespoon oil, pepper.
Mix two oils together, olive and colza or nut, tsp tahin (sesame purée), shallot or garlic, add any herbs you have at hand: tarragon, basil, thyme, rosemary and juice or lemon or tamari (soja sauce).
I love all types of salads (fav being the tiny mix of leaves): Mixture of mizuna, baby spinach and beet salad with a little arugula for spice.
Blond or red lettuce, chicory, raddish leaves, tatsoi. A mixture of both soft and crunchy.

Re: Need salad dressing without vinegar
I made a salad dressing recently with reduced apple juice , with a few other additions , like very fine chopped shallots and a touch of mustard .
I just put a couple of litttle things into it till that it tasted great , I made it for a friend who was on a fat free diet.
It worked well , but I am sorry I do not have a recipe.
Oils... walnut oil sprinkled on some salad leaves is good.
Lemon juice and olive oile mixed together is also good.

My favourit is a lemon garlic salad dressing it's roughly

3 cloves garlic, minced
1 teaspoon sea salt
ground black pepper to taste
Really fresh and tangy
