Chicken or Duck?

Both chicken and duck eggs are readily available here in perhaps equal quantities. As far as I am aware, they are both free range. Personally, except for the shell colour, I cannot tell the difference. They both taste the same to me although the duck egg yolk appears to be a deeper yellow/orange.

Is there a difference in the taste?

Not really.  I love duck eggs, but they're surprisingly difficult to get hold of where I am.

Re: Chicken or Duck?

I think I have a bit of a prejudice against duck eggs, they are just so big!
I kept three beautiful ducks for a while and used their eggs in cakes, which was great using one duck egg instead of two chookies. But every time I contemplated making omelette or something with them, I chickened (ha) out and made a cake instead.

Re: Chicken or Duck?

I suppose much of the taste is dependent on what the birds eat. Both ducks and chickens here are fed on left over cooked rice and whatever they can scrounge from the garden. I read that the eggshell colour is not dictated by the food they eat but is generically determined.

They certainly look bigger (here) and I've just weighed them. The chicken egg (size 1) is 50 gm and the duck egg (not sized) is 75 gm. Which implies 1/2 as big again.

Clarence Court, best eggs, as used by Jamie and other top chefs. They do a few types. I heard  duck eggs should be cooked, thinner shells, more susceptible to salmonella. Haven’t had one for years, I must remedy that.
