A fishy one for you
Have got quite a collection of recipe books but have trawlled through them all and can't find a recipe for Skate. Hubby has never tried it and nan used to cook it in butter but hubby can't eat butter. Have you any suggestions. Living by the sea with our own fleet and hubby a London boy we are working our way slowly through some wonderful meals

Hi Michelle; whenI was young skate was in plentiful supply, my mother used to cut the wings off and batter them ( I don't mean bash them to death) and deep fry them. She used to serve them up with chips and peas. Because the wings are composed of gristle you can eat most of them.
