Key Lime Pie
Hi Everyone,
I was watching the great british bake off last week and really wanted to have a go at making the Key Lime Pie that was made but used a biscuit base.
I looked at the recipe and thought that it was very similar to another recipe that my Gran uses for a lemon flan which is cream, condensed milk and lemon juice and this thickens and then chilled goes to a cheesecake like consistency.
The Key Lime Pie, is the same ingredients except for the addition of Egg Yolks and the fact it needs to be baked for a short period.
Can anyone tell me what the yolks do in the recipe? Can you make it without them, just chilling the pie?

You can make it without the yolk. If you bake the crust first, then cool it...pour the filling in after and chill. You don't have the bake the filling.

Can I ask what purpose the yolks serve?
I understand the acid from the lime/lemon go with the condensed milk to create a reaction called "souring" which thickens and adding the cream creates it become cheesecake like.
Is there any other flavours you could create using this method? Chocolate?

Egg yolks 'set' the other ingredients, when whisked with condensed milk, the two ingredients make a thickening and when whisked correctly become a pale yellow and form a thick liquid, check the thickness with a spatula...if too runny/liquid you have added too much juice.

the egg yolk thing is minor compared to the real issue, what colour is you key lime pie? Fully ripe , as in yellow , key limes are the only way to go imo. Floridians swear by it and I am a wholehearted convert.
