You can't put cling film in the oven as it will melt (it's melting point is around 115 degrees C). The cling film is only used as a guide and never gets rolled up with the meat. The meat is place onto cling film and the cling film lifted up slowly to help roll the meat. When the meat is rolled it will then be wrapped in foil for oven cooking.
Pretend you lay across the breadth of a carpet and somebody else came and lifted up an end of the carpet. You would roll off the carpet. As opposed to you laying on the carpet and somebody rolling you up in the carpet.
Funnily enough I made my first ever roulade on Saturday. It was a dark chocolate and amaretto cherry roulade:) Good luck with your roulade!!
