Cres tasa
Anyone familiar with cres tasa or tassa? I found the following description and was interested because it might be a nice gluten free option but I've not found a recipe.

I havn't heard of it but the pictures of it on google look tasty.
Le Veneziane brand has been highly recommended to me by an italian that is eating wheat free. 100% corn pasta from italy

The recipe in the link is not gluten free - it contains Tipo 00 flour.
I would be surprised if you could make pasta with no gluten, unless you use a gluten substitute like they do in commercial GF pasta. The gluten (or substitute) is very important in keeping it together when it's rolled that thin.

Doh!
I imagine you could use rice flour instead.
Adding the word "gluten" to a google search makes it hard to find polenta pasta dough with tons of hits. ![]()

I was expecting to find a recipe with gluten in it but was hoping it'd only be a little so that gluten free flour would work instead. The look of them in the magazine I have makes me thing there is some wheat flour in there - i was just hopeful.
