Cous Cous recipe

This is a nice one, to try.
I found out Ras-el-Hanout
Translates to head of the shop.
It is the head of the shops choice as to what the spice mix is.
I actually used Tagine paste, I also used Elderflower vinegar instead of sherry vinegar, the first time I made it, it is better than sherry vinegar. The point being there is room for manoeuvre with this recipe.
Always good with my eclectic store cupboard.

A good sherry vinegar has a great rich depth of flavour , elderflower vinegar , I have never had but I imagine it to be a far lighter flavour . But I could see it would still work .

In the UK most people tend to just pour boiling water over the couscous to rehydrate it , it does not seem to get steamed and rubbed as it does in some other countries.

Great if you like cous cous.  For me it's the most overrated thing on the market.  Tasteless and only works with a great deal of flavour added.

I love cous-cous, i always rub it with my hands coated in olive oil, add a little salt too.
I love it served with meats and/or vegs or served cold with chopped mint and tomatoes to accompany other side dishes or a BBQ.

I think cous cous is one of those love/hate things.....a  bit like Marmite...

...Personally, I'd rather eat something else as an accompaniament to whatever I'm cooking...
