I have cooked it for 30 mins. 15 mins covered and another 15 uncovered. Then left it to rest for another 15 mins. It came out medium rare as expected and it was very tasty and tender.
For the rub I have used thyme, rosemary, garlic, olive oil and some spices.
Ashen, the thermometer is a great tip. I have thought of buying one before and never have but I think I will soon.
