I love eggs.  I make omelettes, scrambled eggs, over easy eggs, boiled eggs and medium eggs.  I don't like them hard fried but my hubby does.  I am now wanting some eggs.

we call it uova in funghetto (little mushroom), I boil the eggs, then cut in  half and put to savour in the fresh made tomato sauce with herbs and capers maybe

Ashen, you're right - I don't like curries normally but I'm warming up to them and it's a nice diversion from mediterranean fare.  Now please revise and include your recipe/method.  Looks beautiful!  Is that tomato sauce?

Anyone who wants to submit a dish please include your recipe/method/story and a photo.  If you have any problems submitting a photo please reach out to Merlin for help.  The new image feature is one we should grow accustomed to using, it will make this place very colorful indeed!

This is a dish I made it last winter.  It's a greek dish called Giouvarlakia and it's made with augolemono broth.

The meatballs are 50/50 beef and pork, made with onions, raw rice, parsley and fresh mint, bound with egg white.  They are poached directly in the broth which is home made chicken stock.  Once the meatballs are poached and keeping together I add a little orzo pasta to the broth for body, and then temper it with 1 egg/quart, and the juice of 1 lemon /quart.

Definitely wasn't expecting to be the most excited about eggs on the forums! Always think the only possible reason for somebody not to be mad about scrambled eggs is that they haven't had them done properly.

(slight hyperbole there but let's go with it)

I prefer my scrambled eggs cooked through, I've had them the other way but the texture is just too icky for me.

Apple meringue pudding - my mum use to make this and serve it hot, I like it cold as well.

Melt 170g  butter with the 170g caster sugar,  add 255g SR flour and 3 egg yolks mix well and spread over the base of a deep dish. Slice about 3 cooking apples and layer over base. Use the 3 egg whites to make a meringue then spread over apples, cook for about 45 mins.

Hope this comes out OK, first time I have added a picture.
