Loaf tin recipes

I've got a new loaf tin - one of Jamie's flexible ones.

I only have one recipe for a ckae made in a loaf tin - my grandmother's tea loaf - so i am looking for more.

Does any have any to share?

Apple, Dried Cherry And Almond Loaf

50g Rolled Oats
300ml Milk
240g Self Raising Flour (You Can Use Wholemeal)
1 teaspoon Baking Powder
125g Dried Cherries
50g Diced Dried Apple
75g Soft Brown Sugar
1 teaspoon Ground Cinnamon
3 tablespoons Honey
1 Lightly Beaten Egg
3 tablespoons Roughly Chopped Almonds (Plus 2 Tablespoons Extra

Put the oats in a bowl, pour the milk over them and leave to soak for 30 minutes.
Preheat the oven to 180°C (350°F/Gas 4).
Lightly grease and line a 1 kg (2 lb 4 oz) loaf tin with baking paper.
Sift the flour and baking powder into a bowl and stir in the rolled oats, dried fruit, sugar, cinnamon, honey, egg and almonds. Mix together well.
Spoon the mixture into the tin, level the top and sprinkle with the extra almonds. Bake the loaf for 45 minutes, or until it is golden brown on top and cooked through.
Leave it to cool a little in the tin before turning out onto a wire rack to cool completely.
Toast and serve with ricotta and honey.


Olive or canola oil spray
2 cups self-raising flour
½ cup caster sugar
½ cup sultanas
Rind of 2 oranges, grated
1/3 cup freshly-squeezed orange juice
2 eggs
¼ cup low-fat milk
1 tablespoon margarine, melted

125g reduced-fat ricotta
Rind of 1 small orange, grated
2 teaspoons freshly-squeezed orange juice

Preheat oven to 180°C. Lightly spray a loaf tin. Combine flour, sugar and sultanas in a mixing bowl. In another bowl mix remaining ingredients. Add wet ingredients to dry, stir and spoon into tin. Bake for 35–40 minutes until cooked and golden. Turn onto wire cooling rack. When cool, spread with ricotta topping. Store in refrigerator. Serves 8.

Whip ricotta, rind and juice until smooth.

Fruit Cake

12oz mixed dried fruit (raisins, sultanas and dried peel)
A mug of cold tea
8oz of Self raising Flour
2 teaspoons of mixed spice

1 tablespoon of sugar powder
1 egg

Lining paper for loaf tin

Pour the mug of tea into a large mixing bowl.

Add the dried fruit, sugar substitute and a pinch of mixed spice. Leave to soak overnight.

Next , add the 8oz of self raising flour and one egg to the mixture and two teaspoons of mixed spice. Mix with a wooden spoon.

Pour the mixture into a lined 2lb loaf tin (line the tin with a paper loaf tin liner)

Place in the oven for three quarters of an hour at 165c - 170c

Check after half an hour. The cake is done when it is golden brown.

Leave to cool and then tuck in.

I've found over time that most muffin recipes can be made into a loaf cake. Give it a try. If you don't have muffin recipes, let us know and I'm sure we can help you out.
