melted chocolate
When you melt chocolate in the microwave, it's not to heat it in one go. The best way to handle it is to microwave it in 10 second bursts, and stir it after each time. When you reach the stage where the chocolate is melted, give it a stir. enjoy.

Re: melted chocolate
Sounds like an awful lot of trouble - why not just melt it on your stove over a saucepan of simmering water?

I generally stay away from the microwave, unless I'm desparate. I usually use a double boiler. It's gentle, effective, and I know I won't scorch it.

Re: melted chocolate
Dub boiler is better because direct heat separates the fat from the coco protein, and once that happens you will never get them back together

Re: melted chocolate
Anytime Ive used the microwave for this, its never worked properly. The saucepan of simmering water works well plus you can see exactly whats goin on!
